Vegan Banana Nut Bread Recipe

Ingredients:
2 tbs Ground Flaxseed
4 tbs Warm Water
2 Large Bananas (about 1 cup)
1/3 cup Melted Butter, or Apple Sauce
2/3 cup Brown Sugar
1/3 cup White Sugar
1/4 cup Almond Milk
2 cup Flour (white or wheat)
1 tsp Baking Soda
1/2 tsp Salt
3/4 cup Finely Chopped Walnuts + some for topping
Directions:
Preheat the Oven to 350 Fahrenheit
Lightly Grease and Flour your Pan. This will ensure the bread can be removed more easily. - Set Aside
In a very small bowl mix together warm water and ground flaxseed. Set aside to thicken while you mix the rest of the ingredients.
In a medium bowl sift/mix together flour, baking soda, and salt. These are your dry ingredients, set aside.
In a large bowl use a fork to smash the bananas and then combine with the melted butter. Add in sugars, almond milk and flaxseed mix. Combine ingredients completely.
As you begin to incorporate dry ingredients into the wet ingredients don't overmix. Add dry ingredients in parts, mix about 1/2-1 cup of flour mixture at a time into banana mixture. This helps the powder to not fly out of the bowl while mixing. Fold in the chopped walnuts.
Spread batter into the pan and top with extra chopped walnuts. Place loaf in oven.
Bake for 50-60 minutes.
Notes:
I use a 8.5" x 4.5" pan for this recipe.
When making banana bread in my mini loaf pan with the dimensions 3.28 x 2.5 only bake the loafs at 350 for 25 minutes.
